-pastaia contine 30 - 70% (uneori 40-50%) zahar, care consta in zaharoza (pana la 26% din celuloza), fructoza (13%), xylose, maltoza si glucoza, etc, proteine, aminoacizi (alanina, Valin, Proline, etc), amidon, acizi etc. Semintele contin proteine, grasime (in cea mai mare parte acizi oleinic, linoleic si palmitic), fitohormoni (in special toamna, dupa desfrunzire), tannin, guma de karuba etc.

 

-Efectele benefice: 

-taninii continuti de roscova inhiba enzimele digestive; inactiveaza bacteriile coli si sustin in acelasi timp dezvoltarea unei flore binefacatoare de bacterii intestinale.

-Extractul de pastaie de roscov este folosit ca mirodenie in productia unei game largi de alimente (bauturi alcoolice si non-alcoolice, produse lactate, inghetata, dulciuri, produse de panificatie, budinci, produse din carne, condiment de amestecuri, fructe de produse, si altele). 

 

-Extractul de roscova este un aditiv alimentar (E 410), care este folosit ca si agent de ingrosare si stabilizator utilizat in diverse produse alimentare.
